Upward Dropping Method

Upward dropping method is a common way of pouring tea, which focuses on the relative position of tea leaves and water. First, fill the cup with water at a suitable temperature of 70%, and then add tea. Green tea should be nurtured at a water temperature of 85 ℃, and the more tender the green tea, the lower the water temperature. This way, tea leaves can fully stretch and release more aroma and flavor.

Suitable Teas:

Famous green teas like Biluochun and Xinyang Maojian

Advantages:

After adding tea, it can prevent the tea from being scalded due to high water temperature, and also fully appreciate the process of tea sinking.


Middle Dropping Method

Steps:

Warm the cup -> Add tea leaves-> Rinse the tea -> Brew

Middle dropping method is a way of balancing the relationship between tea and water. “Middle dropping” involves first pouring in some water at an appropriate temperature to about one-third full in the cup, then adding the tea, gently rotating the tea in the cup to moisten it, allowing it to slowly expand before filling the cup with seventy percent water. This method allows the tea leaves to fully contact the hot water, making the aroma and flavor of the tea more intense.

Suitable Teas:

Dragon Well(West Lake Longjing), Anji White Tea, and Lu’an Guapian

Advantages:

By using this soaking method, there is no need to worry about a bitter taste due to high water temperature.


Lower Dropping Method

Steps:

Add tea leaves -> Add water

Descriptions:

The lower dropping method is a more traditional way of adding tea leaves that emphasizes the sedimentation process of the tea. First, add an appropriate amount of tea leaves, then pour water at the right temperature along the side of the cup to about seventy percent full. You can use either a glass cup or a porcelain Gaiwan for this. Gently shake the cup to ensure the tea leaves are completely moistened and allowed to naturally expand. This causes the tea leaves to settle at the bottom of the cup, creating a sense of layering and visual appeal.

Suitable Teas:

Green tea with loose tea shape or low tenderness.

Advantages:

This is a common tea brewing method that can make the tea flavor more robust
