2. Tea Polyphenols and Caffeine

All teas contain caffeine.

  • Green tea: Each gram of tea contains 20-45 milligrams of caffeine.
  • White tea: Each gram of tea contains 15-30 milligrams of caffeine.
  • Yellow tea: Each gram of tea contains 20-45 milligrams of caffeine.
  • Oolong tea: Each gram of tea contains 35-55 milligrams of caffeine.
  • Black tea: Each gram of tea contains 40-120 milligrams of caffeine.
  • Black tea/Pu erh tea: Each gram of tea contains 8-15 milligrams of caffeine.

  • Tea polyphenols are an important class of compounds in tea, accounting for 20% to 35% of the total dry matter.
  • Tea polyphenols include four major categories of substances: catechins, flavonoids and flavonoid glycosides, anthocyanins and anthocyanins, phenolic acids and phenolic acids. Catechins account for about 70% of the total amount of tea polyphenols and are important components that determine the color, aroma, and taste of tea leaves.
  • The ranking of polyphenol content in different types of tea is: green tea > yellow tea > black tea > white tea > oolong tea > black tea.

Tea polyphenols have antioxidant properties and can effectively eliminate free radicals in the body, reducing the damage of oxidative stress to the body.

The sweetness in tea mainly comes from amino acids, while the refreshing taste mainly comes from theanine. Theanine accounts for 1% -2% of the dry weight of tea, which gives tea a special aroma. Theanine not only has a significant impact on the flavor of tea, but also has various physiological functions, including anti fatigue, relaxation of nerve tension, and relaxation.

3. About our tea

To let everyone can drink the tea that suits them best.

We suggest using pure water for brewing tea. Although there are claims that using mineral water or spring water can enhance the taste of tea, this practice may only be suitable for certain types of tea and may potentially affect the taste due to impurities in the water. We recommend using pure water to brew tea to eliminate the impact of impurities, allowing you to experience the true flavor of the tea. Additionally, if you have silver tea sets, such as a silver kettle, they can serve to purify the water quality, so using them to boil water might yield even better results.

In fact, the temperature of water does not have a significant impact on tea. When the quality of tea is the same, factors such as water quality, tea quantity, and brewing time have a greater impact. So, we recommend brewing with water at 100 degrees Celsius, adjusting the amount of tea leaves and brewing time to achieve different flavors.

We recommend using about 3g of tea leaves for every 150ml of water. If you prefer a stronger taste, you can increase the amount of tea leaves to 5g. Too much tea leaves may result in excessive extraction of substances, making the taste overly strong. We suggest that you can add tea leaves in multiple batches, with a smaller amount each time, to achieve a more consistent flavor.

Only when you are using a device that can separate tea from water for brewing, such as a Gaiwan or a specially designed tea and water separation cup, do you need to consider such issues. Here are our recommendations:

1. For tender teas, such as green tea, young bud white teas (like Bai Hao Yin Zhen), yellow tea, and herbal teas, these teas have a delicate and fresh taste, and are not suitable for being brewed for too long. Initially, it is recommended to use a shorter brewing time, such as 15 seconds, and after the third infusion, you can gradually increase the brewing time to maintain the taste.

2. For aged white teas, we suggest a slightly longer initial brewing time of 30 seconds, and after the third infusion, you can gradually increase the brewing time to maintain the taste.

3. For oolong tea, black tea, and dark tea, due to their high fermentation levels, rich in substances, and quick extraction, we recommend starting with a 5-second brewing time. If the tea color begins to lighten in subsequent infusions, you can increase the brewing time by 3 seconds.

When you use a regular cup, such as a mug, to brew tea, it usually means that you cannot separate the tea leaves and water in a timely manner. At this time, we recommend that you reduce the amount of tea added to avoid the tea being too strong. At the beginning, we recommend adding 2g of tea to 150ml of water, and then adding 1g of tea every 2 bubbles. This way, you can always enjoy tea with the same taste as the first cup

We use vacuum packaging, nitrogen filled packaging, and cold chain storage as much as possible to ensure that our tea leaves are delivered to you as fresh as possible. All tea leaves should be kept away from heat, light, moisture, and odors. Exposure to these factors can lead to tea spoilage and loss of flavor. Our bulk tea is packaged in resealable zippered bags, so we recommend that you reseal all bags after use and store them in a cool and dry place.
White tea, oolong tea, pu erh tea, and black tea are easier to preserve than green tea and yellow tea because they require further oxidation in the air. However, they should also be kept away from heat, light, moisture, and odors. Green tea and yellow tea should be stored at low temperatures to avoid spoilage due to their high water content. After opening, they should be consumed as soon as possible within 6 months.
