About Jin Xuan Oolong

Jinxuan tea belongs to the category of oolong tea, which is one of the six major types of tea, and is produced in Taiwan, China. It is a lightly fermented oolong tea. Jinxuan is the name of the tea plant variety, mainly produced in Nantou and Alishan Township in Chiayi County. It is a new variety successfully cultivated by the Taiwan Tea Research and Extension Station after more than forty years of breeding in the 1980s, and is ranked as the twelfth new variety, named Tai Cha 12, which is the origin of the scientific name of Jinxuan tea.

The creaminess

The creaminess in tea is actually a type of floral scent. It is the result of the combined action of esters, alcohols, aldehydes, and other compounds produced during the fermentation process. It is not as rich and strong as one might imagine, but rather a naturally elegant, subtle, and understated aroma, with a complex fragrance and taste that includes hints of orchid, osmanthus, and apple.

brewing method

cold brewing

  • Water: 150ml
  • Tea: 5g
  • First infusion 30s, second infusion 20s, third infusion 30s, from the fourth infusion onwards, adjust by adding or subtracting 5s based on taste.

hot brewing

  • Tea-to-water ratio: 1:50
  • Refrigerate for 4 to 5 hours.
  • Recommended to use mineral water or purified water.
