About Dragon well(LongJin)

West Lake Longjing(Dragon Well) is a famous green tea in China, produced in Xihu District, Hangzhou City, Zhejiang Province. It has a long history and can be traced back to the Tang Dynasty. It became quite famous in the Song Dynasty and became a tribute during the Ming and Qing Dynasties.

Production Area

The West Lake area is a traditional and core production area for Longjing tea, located in the West Lake Scenic Area of Hangzhou. Shifeng Mountain, Longjing Village, Meijiawu, Yangmeiling, Wengjia Mountain, and Hugong Temple are some of the most famous production areas.

The Longjing produced in other districts and counties of Hangzhou is called Qiantang Longjing. In other regions of Zhejiang Province, such as Shengzhou, Xinchang, and Zhuji, the Longjing produced by them is called Yuezhou Longjing.

Production Process

Picking: Around the Qingming Festival in spring. Select tea buds with one bud and one leaf or one bud and two leaves.

Qingqing: High temperature treatment is used to stop enzyme activity in tea leaves, preventing them from continuing to ferment. 

Rubbing: Rubbing and twisting the tea leaves after withering to form strands, enhancing the texture and aroma of the tea leaves. 

Stir frying: By continuously stir frying, the water inside the tea leaves evaporates, forming the aroma and making them flat. 

Drying: Drying is the final step, aimed at making the rolled tea leaves dry, moisture free, and convenient for storage and transportation.

The taste

West Lake Longjing tea is characterized by its "green color, rich fragrance, sweet taste, and beautiful shape". The aroma of West Lake Longjing is also considered to embody the essence of the springtime in the Jiangnan region. 

 West Lake Longjing has a typical bean flower scent that is easily recognizable, but this aroma, which is produced through the processing technique, does not necessarily represent the true quality of the tea. Some of the finest Longjing teas are accompanied by an orchid fragrance, a flavor that is rare and sought after.

Brewing Method

Quick way

  • Water: 150ml
  • Tea: 1.5g
  • Brewing Time: 3 minutes
  • After brewing 2-3 times, add 1g of tea and so on

Traditional way

  • Tea: 4g
  • Brewing Time: 3 seconds
  • Brewing more than 5 times until the taste fades
  • Add brewing time to 5 second after brewing for 5 times
